Watermelon Gazpacho

  • Total Time: 15 minutes

Ingredients

1/16 Seedless Watermelon (medium, diced into cubes)

1/4 Red Bell Pepper (chopped)

1/4 Tomato (medium, chopped)

1/8 Cucumber (medium, chopped)

1 tbsp Red Onion (chopped)

1 tbsp Extra Virgin Olive Oil

1 1/2 tsps Fresh Dill

1/4 tsp Apple Cider Vinegar

1/4 tsp Sea Salt

Instructions

1. In a food processor or blender, add all the ingredients and process until mostly smooth. Serve into bowls and enjoy!

Notes

Leftovers
Refrigerate in an airtight container for up to four days.

Serving Size
One serving is equal to approximately one cup.

More Flavor
Top with feta cheese and serve with toasted bread.
